How to Make Honey Garlic
This is one of the easiest fermentation projects for beginners.
- Prep: Fill a clean glass jar about 3/4 full with peeled, slightly crushed garlic cloves. (Crushing them slightly releases the juice to start fermentation).
- Pour: Pour raw, unpasteurized honey over the garlic until the cloves are completely submerged.
- Wait: Loosely cap the jar and leave it in a dark cupboard. For the first two weeks, flip the jar daily to ensure the garlic stays coated.
- Burp: Open the lid slightly every day to release built-up gases.
